Just had lunch today and thought I’d share with you what I had – Tomato and Avocado Salad!

Tomato and Avocado Salad
  • 4-6 tomatoes
  • 1 red onions
  • 1 large avocado
  • mixed salad leaves
  • For the dressing:
  • 1 tblsp balsamic vinegar
  • Juice of ½ lemon or lime
  • 1 tblsp olive oil
  • Handful mixed herbs (parsley & chives)
  1. Chop tomatoes and red onion roughly, peel the avocado, remove stone & chop into small chunks.
  2. Mix all the dressing ingredients together until well combined.
  3. Mix all salad ingredients together and lay on a bed of fresh mixed leaves with the lettuce
  4. Combine all the dressing ingredients together & drizzle on top.
  5. Garnish with a slice of lemon or lime
  6. Enjoy!!
