Wheat Free Healthy Lasagne

  • 500g Lean minced steak
  • 1 large finely chopped onion
  • 2-3 cloves garlic crushed
  • 1 red pepper finely diced
  • 1 heap tablespoon Tomato puree
  • 1 carton of Passata
  • 1 large leek cut into large sized sheets - this will replace the pasta sheets
  • Goats Cheese (Optional)
  1. Fry the beef, onion and garlic in a large pan.
  2. Once the beef is sealed add the peppers and tomato puree and mix well.
  3. Add the passata and simmer for 10-15 minutes
  4. Meanwhile boil some water and dip leek sheets in for a few seconds, (enough to wilt the leek) once it’s done place on a kitchen paper to dry
  5. Once the tomato base is ready place a large serving spoon full into an oven proof dish, layer with the slices of leek, then tomato mix until the dish is full
  6. Thinly slice a little organic goats cheese on top
  7. Place under a grill for 5 to 10 minutes
  8. Serve with a large green salad
